Recipe: Cinnamon Apple Power Balls

I’m always looking for yummy, healthy snacks for the kids to take to school.  Over the last few years, at least one of my children was in a nut-free class so I’ve had to search for snacks that do not contain peanuts or tree nuts.  I finally found a recipe that is a hit with both the kids and adults in my house: Cinnamon Apple Energy Balls.  They are nut-free, dairy-free, and can be slightly altered to be gluten-free.  The recipe is super simple and easy to make, and have I mentioned they are delicious?  These are sure to be a crowd pleaser!

Ingredients:

  • 1/2 cup pitted dried dates

  • 1 cup dried apples (the chewy kind, not the crisp freeze-dried apples)

  • 1/2 cup uncooked old-fashioned oats (you can substitute gluten free oats if needed)

  • 1/2 tsp cinnamon

Instructions:

  1. Combine all of the ingredients in a food processor or high-powered blender and process until it forms a thick paste. I use my Ninja and it works great. You may have to stop the food processor a couple of times to press down the mixture with a spatula.

  2. Using about a tablespoon of the mixture, roll into balls. If you want to make smaller ones for tiny fingers, use about 1/4 teaspoon each.
